01 / ABOUT THE PLACE

About this place

Tucked into a quiet pocket of Motoakasaka, Hashiguchi provides a sanctuary where mobile phones and photography are put away, leaving diners fully attentive to each piece handed across the counter. The interior holds just 8 seats, stripped of unnecessary ornamentation. Guests are welcomed into the hushed atmosphere by the precise craftsmanship of the master and the warm hospitality of the okami.

Meals that begin with small seasonal tastes transition smoothly from sashimi and appetizers into nigiri. Flounder, lean tuna, and ark shell are typical prelude plates, paving the way for kelp-cured flounder, Japanese spineless cuttlefish, marinated or vinegared cuts, simmered orient clam, and sea urchin gunkan. Diners have noted the distinct lightness of the nigiri—resting gently on the counter as if settling into place—where seasoned rice with distinct grains melts effortlessly alongside the seafood. Shellfish lovers in particular will appreciate the careful handling of bivalves throughout the meal.

The beverage selection features sake alongside white wine, Champagne, and homemade plum wine, allowing guests to match each pour to the rhythm of the meal.

Dinner runs from 18:00 to 22:00 and requires an advance reservation. It is an ideal setting when you wish to savor classic Edomae sushi technique in serene surroundings.
